Lemon & Mint Mojitos for the Dog Days of Summer

Ingredients
- 2 slices of lemon with rind already zested (keep zest)
- 1 tsp sugar
- 10 mint leaves
- 1-1/2 oz. white rum, gin or vodka
- Cracked ice
- Soda water
Preparation
Muddle mint, sugar, one lemon slice and half of lemon zest together in the bottom of a tall glass.
Add cracked ice and pour over spirits. Plus a couple of splashes of soda water.
Swizzle the ice and liquids without mussing up the mint and lemon too much. “Bruise not crush” as another recipe suggests.
Squeeze the second lemon over top and add the rest of the zest to garnish.

I ordered a mojito the other night before dinner. Now, I’m strictly, a dry vodka martini/scotch kind of drinker, but there is something about a summer breeze that works the taste buds into a fresh minty longing, like no other beverage.
Unfortunately, this night’s mojito was made with too much sugar. I actually watched the bartender scoop three heaping spoonfuls into the glass before grinding the helpless mint leaves into submission.
1 TSP sounds about right though David. Thanks for the recipe.

With just 1 Tsp of sugar this mojito is definitely on the drier side. Experiment and let me know how it goes.

So this is why we haven’t been able to track you down lately! You are very busy blogging (and eating well, it appears). We tried to find you and pamela for a 50th bday party in May, but alas to no avail.
